At the restaurant I was working at, I use to make buckets of Sangria during the summer for the customer sitting on the terrace.
After making it, we waited minimum 48 hours before serving the Sangria.

24-72 hours is standard, depending on how strong you like your flavors. Beware the sugar content in grenadine/honey/juice. The more sugary an alcoholic drink is, the worse the hangover. If you want a low-sugar, low-cal version, try this recipe:
Sangria
4 packets Splenda
4 Tbsp water
fresh orange slices
fresh lemon slices
fresh lime slices
fresh peach slices
fresh grapes
1 bottle wine
club soda
Dissolve Splenda into water. Add to pitcher, with fruit slices and grapes (white for red wine, red for white wine), and bottle of wine. Stir, then chill. Top pitcher with drizzle of club soda just before serving.
24 hours will be the minimum, but you can do it quicker this way: Mean prepared and served.
With a house red wine bottle you need one orange, one lemon, one orange soda "Kas", sugar and triple sec or grand marnier half glass.
Mix it with the sliced orange and lemon and ice cube and that’s it .
That’s the way we prepare it in Spain in a normal bar when tourist show up. Sangria is popular on the mediterranean coast and south of madrid, in other area they have other tradition Madrid serve tinto de verano, basque country serve cider and txakoli, galicia serve vinho verde.

This recipe tastes wonderful and requires only 4 - 8 hours:
Summer Sangria
3 tablespoons sugar
3 tablespoons spiced dark rum
3 tablespoons orange liquer)
1 orange (sliced)
1 lemon (sliced)
2 ripe peaches (sliced)
3 ripe plums (sliced)
2 cinnamon sticks
1 bottle Spanish red wine
Sparkling soda water
1. Add to a punch bowl (or other large bowl): sugar, rum, orange liquer, fruits, and cinnamon sticks. Mix together.
2. Stir in the bottle of wine.
3. Chill in the refrigerator for 4 - 8 hours before serving.
4. Discard cinnamon sticks. Spoon fruits into glasses. Pour the spiced wine over the fruit. Top with a splash of soda water.
Makes 8 glasses.
