How many ounces of cheese per person for a wine & cheese reception?
There will be minimal other food–a sushi platter, a shrimp platter, a fruit platter (as well as fruit displayed with the cheeses), some bread and water crackers. Our Wegmans has great cheeses and cheese delicacies (like apricots stuffed with marscapone and topped with a glazed walnut, or a brie and marscapone torta with pumpkin puree, topped with roasted nuts and craisins)—but nobody can tell me how much cheese I need!

a good rule of thumb is 8oz per person if no food… 6oz if there is snacks… 4oz if there is food.

Ahhhhhhhhhh, behold, the power of cheese!
I too have a great Wegman’s and they have wonderful cheese. Try a Baked Brie, Gouda, Muenster, Jalepeno Monterey Jack, Chambord, etc…
Assume at least 4-5 ounces of cheese per person. A serving of cheese is 1 ounce.
Since you are only serving some platters as finger food, you will need about 8 to 10 ounces of cheese per person, depending on your budget. But at LEAST 8 ounces per person.
Try to get 2 kinds of each variety.
