Wow, that’s a lot of questions. I did quite a few wine and/or cheese tasting sessions in my youth. I’m a retired French teacher and lived in France. I studied about fine Foods and Wines. You can’t hold a wine tasting course if you don’t know anything about wines.
First step is to visit a couple of wine stores that have wine tastings and sample some wines and learn. Next step is to read up, research, and visit a couple of wineries and do more sampling and learning. If that’s impossible, then invite a knowledgeable person to do the presentation. Gather your info, decide which wines you want to offer as samples in your wine tasting party or course.
I used to make print out for each wine sampled, offering the following info: Name of the wine, Region, year, a little map of the area, name of the wineries, which years are best for this wine, what to expect in appearance, color, clarity, taste, acidity, sweetness, bouquet, lightness, full-bodied, fruity, texture, etc…I would not do more than 4 wines in one sitting and I grouped all in the same color or region.
At the gathering, I hid the wine in a brown paper bag, had the table set up with wine and water glasses, plates, knives, a few bland cracker, some blue cheese or other cheeses that will help wipe your palate, a couple of jugs of water, a couple of large bowls, some mints and sweets for after the tasting. If you’re broke there is nothing wrong with sharing the cost of the wines and cheese with your guests. Each can contribute a little to the wine tasting party.
As you pour and sample each wine each allow each of your guests to express an opinion about what they are tasting in terms of the above categories, then uncover the wine, show them the name, tell them about it and give them the hand outs, teach them how to read the label and what to look for when they buy it and the approximate price range. If it’s a foreign wine, it helps to talk about the bottling on the premises or the Chateau and let them know why one importer is better than another. Next, eat cheese and crackers, rinse out your mouth and your wine glass or use a different glass, have a few sips of water, etc..
Do the same with each wine that you sample. Make sure that you go from the lightest tasting to the heaviest and most powerful wine. Take your time and enjoy. Good Luck.
