How would I convert to the ancient Pagan religions of the Greeks?
Because im about to embark on a possibly dangerous boat trip
and I believe that my safety would be best assured if I made a offering of Fine wine to Poseidon

Well, if you want to pray to Poseidon, you could just pray to him or leave him an offering. Ask for his blessing. You don’t actually have to be Hellenic to pray to the Greek gods; you just have to believe in them and believe that they can answer your prayers. I am an Eclectic Wiccan, and I have no problem praying to the gods with whom I’m familiar, and that includes the Greeks. My patron goddess is Venus, but when I want good luck, I’ll pray to Hermes, and if I want motherly protection, I pray to Isis. You don’t have to convert to call upon any god. As long as you believe they exist, you can pray. However, if you actually want to be Hellenic because you want to devote yourself to the Greek gods, that’s fine too. Just make sure that that’s what you want to do, and not just pray to a Greek god once. Converting to any religion means studying everything you can about that religion and devoting yourself to it. All I can say is research what you can about Hellenism, and then, after studying it and if you still want to, convert. Good luck on your path, whatever it may turn out to be.
Venus Bless. Or in your case, may Poseidon bless you.
You have really cool glasses. Can I have them if you don’t survive?
They are there waiting to be talked to, dear. It’s not hard.
So talk to them.
