I have about 3 cases of a red Barbera wine, which is supposed to be consumed young. Since I don’t have a cellar and it may take me 1 year to drink it, can I keep the bottles at room temperature or should I store them in the spare fridge (about 40F)? I kept white wine in the fridge for 2 years and it was very good, but I never tried with reds.

Our caterer does not provide the alcohal for our wedding reception so we have to purchase it from an outside vendor. We’re going to offer champagne, beer, wine, and mixed drinks. I have the champagne, beer and mixed drinks all figured out but I need wine suggestions. I was thinking of offering 1 red wine (Cabernet Sauvignon), 1 white wine (Pinot Grigio) and maybe one blush/rose wine. Any blush/rose wine suggestions?

I heard that as long as one of those two ingredient is of opposinte temperature from the other, then it will effectively prevent the churning of a dairy product when in contact with an acidic (in this case the white wine) ingredient. However, when I tried this approche, I ended up with alot of clumps in my sauce. Please help!!

I had this really great white wine last night, but there was no name on the label. The was just a picture (and it was kind of weird) of a young child with blonde hair holding a string with a bird flying at the end of it. Someone help me find out the name of this.
