Broth is a great substitute, though I would add something else with just a little acidity as well. Maybe a smidge of lemon or vinegar. Just a little though, so you replicate the contribution of the wine that you are omitting. Grape juice is probably too sweet, as a dry white is most likely your best goto wine. I would avoid a Chardonnay.
If you don’t want to use wine, just use chicken or vegetable broth.
I use whatever dry white I have in the house.
i sometimes use beer!
If you need to leave the wine out, just use the same amount of broth. Or if you want to use wine, get one of those little 4-packs of little wine bottles from the store. I use a Bella Sera pinot grigio for cooking wine, and the best part is that the 4-pack is only about $5 and doesn’t go to waste by opening a whole bottle just for 1/2 cup.
chicken stock is best
You can use white gripe juice, but it adds some sweetness. Other then that there are actual cooking wines that work great for uhh… Cooking haha
