		<description>Cheese is actually not made with fermentation.  It is what I call a &#34;ruined food product&#34;.  I.E., the food is ruined to make a better new food.  

The reason that cheese (as well as beef, olives and some other foods) go so well with wine is that the wine is acidic.  You eat the food and the food fats coat your tongue, blocking your sense of taste or at least dulling it.  The wine washes the fat away and your sense of taste is newly renewed after every sip.</description>
